Here is the current Smartsheet API Reference (2.0.0) for Business and Enterpirse plans. This documentation was last updated 2023-02-06.
Each SDK has it's own page with version information and updated dates, see the table under “SDKs and Sample Code”

We are looking for detailed information for below questions.
- Which is the latest API version? what is the Sunset date of API version?

As we have added question on stack overflow with smartsheet-api tag as per guideline.
But we found question we asked on stack overflow was closed stating that "these types of questions aren't really appropriate for Stack Overflow".
Will you please help how we can qet the aswers to our queries ?

The correct "version" of the Smartsheet API is 2.0. This should appear in every path you use.
For increased functionality to a given endpoint, we use a query param of "level=" and then an integer like 1 or 2. However, "level=0" or leaving off the level query param gives you the base functionality and this should always work. (Here's the Level documentation)
We do not have a planned ETA for if or when version 3.0 of the API will be released; the API isn't going to change in the foreseeable future so there is no current sunset date. Here's the information on versioning and changes to the API.
There are a very few small cases where something will be deprecated because there are better solutions over the years. In those cases, the documentation will be clearly marked with what was deprecated and what the continuing options might be.
