Ideas for a project/document management

I am looking for the best way to implement a way one or multiple people to review a document make changes to the document and after they make changes or decide the document is fine as is select a status of Need changes or no changes needed.

My end goal is to try to use smartsheets to maintain the status of standards that need to be reviewed and corrected if needed by a certain time.

I am curious to know what functions i should be using and some tutorials.
