How to record the beginning and ending dates of each person working on the same sheet
How do I record the Start Date and End Date of each Assigned Person on an Individual Level for a Project Plan Sheet with Multiple Assigned People? For instance, how do I record the general start date and end date of Person 1, Person 2, Person 3, and Person 4 separately when I have 60 tasks that are divided across 4 people? How should the same be shown on the chart, which would be helpful to illustrate the job loads of each worker in a visual manner?

If by "general start date and end date" you mean the earliest start date and latest end date of all tasks for a given person, then you can use the report to group by "Assigned To" and then aggregate by start date and end date.😃
As for visually illustrating each worker's job loads, I would use a pie chart of the sum of the weightage given to the worker.
