Writing today's date into a cell when the Status value in the same row contains "Complete" or "N/A"

You would probably want to do this via automation than with a formula, as a formula would give the date as today - every day. For example, it would show tomorrow's date tomorrow if you looked at the sheet.
The automation setup is pretty simple though, along the lines of this:
Just make sure your date column is set up with Date as type to be able to record the date into it!
