I need to use a formula to return the working days between TODAY and Oct 7 2024. I used =NETWORKDAYS(TODAY(), DATE(2024, 10, 07), [HOLIDAYS]) and it is unparseable.

Are you typing [HOLIDAYS] into your formula? Try excluding it as this:
=NETWORKDAY(TODAY(), DATE(2024, 10, 7))
