Anyone know why when pulling the date from the created date column, the dates don't match?

This might be related to something I noticed late last year, especially if you're not in the US.
I'm in Adelaide, Australia and whenever a specific sheet updates the Latest Update cell for that row changes to US Pacific Time, even though the originating sheets where it pulls information from retain their Adelaide times.
I've tried various formulas which fix it on the day, but the next updates change it to Pacific time.
