Hello! Is there a way to turn off the AI assistant? We have a sheet that can not be altered.

AI won't automatically alter your sheet. Someone has to open the AI helper and ask for a new formula or a new summary. You can use sheet permissions to lock down who has the edit or view or admin rights to prevent changes that you don't expect. You can also lock columns and lock rows to prevent editors from making changes.
If you want to further lock things down, you can use Dynamic View. Dynamic View allows you to filter data and lock away rows and columns that you don't want edited. You don't have to grant edit to anyone for them to use Dynamic View to edit the data. AI doesn't work in Dynamic View either.
