What formula do I use

For "When start date is populated, auto turn Status to ‘in progress’
Im new to Smartsheet and ProDesk appointments are not available until June 2nd. Any guidance is appreciated, thank you!

You should get what you need if you put that in your status column and make it a column formula
=IF(ISBLANK([Start Date]@row), "Not Started", "In Progress")

It might be to basic of a solution but assuming your statuses are, Not Started, In Progress and Completed, I would maybe try something like:
=IF([Target End Date]@row ="", "Completed", IF([Target Start Date]@row ="", "Not Started", IF([Target Start Date]@row <>"", "In Progress")))
This might need some maniputlation, but I think it all looks right!
