I don't know of a way to revert back to an earlier version.

If you created a backup of the sheet, you can copy and paste the deleted data from your backup, to your sheet. If you are not making backups, I would highly recommend you start: http://help.smartsheet.com/customer/portal/articles/506499-backing-up-your-data

Its possible the Support team can send the sheet owner a checkpoint of the sheet from before the changes were made. Email support@smartsheet.com with the name of the sheet, email address of the owner, and approximate date/time you want the checkpoint from.
