Is there any way to automize a process to transfer tasks from email account (on Mac) to Smart Sheet ?

There are a few ways to accomplish this and it depends on your specific use case. Which e-mail solution do you use? How do you want to use the solution more specifically?

Not always, but even sending to the same sheet would be helpful

Ok.
One way to do it would be to use the service Zapier and create a special e-mail address and forward the message (task) to it.
