Does anyone know how to view gantt chart history? Dates that have passed rather than prior versions.

No there is no way of doing this as a smartsheet is always current, it does not thave the Status date option.
You can however export once a week into Excel or Google docs as a backup/history.
Are trying to see paste events or prior versions? To see past events, just scroll left in the Gantt chart. Past versions - all cells have cell history. Right click in the cell and select View History.
You can also create backups of your sheets and revisit them if you need sheet history.
You mean something like a 'baseline'
