I changed the font name and size on my entire sheet to make it more readable, making it Tahoma 8pt. Today I updated a percentage complete field and found it entered in Arial 10 point. Looks like a bug to me.

Hi Barry - font size setting should stick after setting them. Try this, set the font settings for your entire sheet by single left clicking on your first column header (actual columns with data - not the attachment, discussions, etc columns), hold shift and single left click on the last column header. This will select your entire sheet. Now set the font size and type from your toolbar and save.
Test this and let me know if it does not work!
That seems to do it. Not sure how I 'selected all cells' before but it may be related the the 'select the first actual data column' trick. Thanks for the help!
