Use "Copy Row" Automation to Generate a New Sheet?
Is there a function to use the "Copy Row" Automation flow to send rows matching the defined criteria to a newly generated sheet each time rather than to a pre-defined existing sheet?

Unfortunately not. Copy Row and Move Row must be pointed towards a pre-existing sheet. They cannot be used to create sheets.
It is a great idea though. Feel free to Submit a Product Enhancement Request when you have a chance.

Copy row does create the rows from the original sheet in the new sheet however. I just used this feature to quickly build 26 sheets for a project. You just need to go into each and delete the extra 4 columns afterwards.

If you have a created sheet with the correct column names, you can make a new blank sheet, create your copy or move workflow to the unedited blank sheet, and it will populate the blank sheet with the correct columns after the first submission.
It just a quick way to split your data up. I suppose it isn't that much different from saving as the sheet but this way you don't have to worry about deleting workflows and conditional formatting and previous data if that is an issue.

Yes. But that sheet must be created before you can have it populated with the new rows.
I think the posting is trying to have rows moved to a sheet that is not yet created but will be created once the first row triggers the workflow.
While it will add the columns to a pre-existing sheet, that sheet must still be pre-existing before rows can be moved/copied to it.

-- Yes this is the functionality i was inquiring about. to generate a new sheet at the time of workflow trigger. It does not seem that this is feasible at this time. Thank you all for your help.

Yeah I understand that. I was just suggesting a way to make it faster manually because fully automating it either requires coding or an external service. Sorry if that wasn't clear.

I wanted to bump this thread. Has this feature been introduced since this discussion? I started looking into Zapier and Microsoft Power Automate, but didnt want to waste time getting familar with them if I didn't have to.
