I need help with a formula based on today's date.

Such as

0-120 days is green

121-179 is Yellow

over 180 days is Red.

I think you are looking for something like this?
=IF([End Date]@row <= TODAY(180), "Red", IF([End Date]@row <= TODAY(121), "Yellow", "Green"))
