Updating TODAY() in Date Reference Sheet

I have a "Date Reference" sheet where any place I have to reference current date I have it pull from this 'Date Reference' sheet. I had an automation set up where there was a lock/unlock each day... which then stopped working... I created a Data Mesh so that the API "activates" the sheet every day which has now stopped working.

How do I have the =today() update everyday regardless of whether I go in to the sheet or not?

In my client solutions, I’m still using Zapier, and it’s been working great, but I’m exploring other solutions as well. I have a few ideas.

Is that an option?
