Help: How do I add non-regular working days

I'm trying to figure out how to add non-regular working days. For example, if I want to allocate the odd weekend into my working days - how can I do this? No problems scheduling regular working days and holiday days - just can't work out how to add extra, non-regular working days. Thanks for any tips!
