This depends on your set-up and what change you're looking to record. You could always check the Cell History for changes or depending on your content and plan-type use Work Insights.

Otherwise, you could set a time-based workflow that checks the sheet once a day (or similar) and filters by your conditions to record that day's date. Here's more information: Create a Time-Based Automated Workflow
