Event Request - block date(s) when event is full with a formula

Hello! I am creating a form for people to sign-up for an event. There are only so many spots available for these events, so I want to have a date option be greyed/struck-out when the event is at capacity. Is there a formula or conditional formatting that will do this once the event is full? Thinking to use Sheet Summary to have a field where I key the maximum capacity and when that is reached, use that field as my criteria. Thoughts?

Hope you are fine, you need to create a booking system for that, please check my following post which i designed a booking system for one of my clients. Using smartsheet to book workspaces/meeting rooms. you can use it as a start and if you like we can meet on zoom to help you to create your system.
