Pulling data from Project Plan into Project Intake

As the summary of all Project information, is it possible to pull the start date from a particular project folder; noting there are many?

You'd need to connect the sheet with cross-sheet formulas, or you could use cell linking.

Another option that automates it completely is the Premium App, Control Center. Is that an option?

Would any of those options work/help?

I would need cross sheet references as I have many projects, and this project folders. How is this updated as new project (folders) are added?
