Is there a way to limit which users can edit a certain column in a sheet?

You can lock columns. This will only allow Admins to change the columns.

Right-click column(s) and select Lock

Be aware. If a user can edit a single column within a row, then they can delete the entire row - even if every other column is locked :(

So yes, it's possible to lock columns from being edited (although not in a user by user customization) - BUT if a user can edit any part of a row then they have the power to delete the ENTIRE ROW.
