When sharing a worksheet among multiple users can the names be hidden so that not all users see who the information is shared with?

If you're sharing a sheet directly with users, anyone shared to the sheet will be able to open up the "Share" window and see the other collaborators who have access to the sheet.
If you don't want your collaborators to see each other and you're on a Business or Enterprise plan, I would suggest Publishing the sheet and providing them with the Published link instead. Published users looking at the sheet won't be able to tell who else has access. Here's more information: Publish a Sheet, Report, or Dashboard

I created two sheets with separate forms and when I checked to see if anyone had submitted the forms yet, I didn't see anything on either sheet but when I click on "manage forms" it says that there are 62 submissions for one and 18 for the other.
