When creating a work flow, how to I get the alert to trigger based on a if a value "greater than" a certain amount of time?

Sure!
A helper column is a column we'd only use for helping achieve something. An example could be a check-box helper column with the formula below that would get checked when the date is earlier than today. (Could indicate that somethings overdue)
Try something like this.
=IF(DateColumn@row < TODAY(); 1)
The same version but with the below changes for your and others convenience.
=IF(DateColumn@row < TODAY(), 1)
Depending on your country you’ll need to exchange the comma to a period and the semi-colon to a comma.

You'd need to use a so-called helper column with a formula that would check a checkbox or similar.
