How to have symbol ticked if the variance of baseline is more than -5 days behind. can this be done?

You can use an IF statement to do this!
Try something like:
=IF(Variance@row <= -5, 1, 0)

I tried it but I can't get it to tick the flag, under the risk column.

Are you getting an error or is it simply not checking? Can you show me a screen capture of your sheet again with the formula "open" (double click on the cell so the formula shows in the cell)?
