Hi, As per attached screenshot, The stock level is 3000, When the week 12 / 13 / 14 below the 3000, can the stock level cell auto change color or send a reminder via mail?

You can create a conditional formatting rule that will change the cell or row color when those columns fall under that amount. More on conditional formatting here: https://help.smartsheet.com/articles/516359-conditional-formatting
You can also create a notification rule that will send an email when those columns falls below 3000. Details on creating notification rules are available here: https://help.smartsheet.com/articles/542904-using-notifications

I menat via row, not columns.
Shaine's methods will work with the row... but its checking the particular column, for the total amount to drop below your settings, then it will send you the row. A notification will send you an email and conditional formatting will color the row.
