How do I keep the top row at the top when filtering (It holds all my calculations totals etc.) I understand we can’t lock it (if I’m correct), is there a symbol we can put in any of the top rows columns?

If your top rows are parent rows, you can check the box to include parents when in the Edit Filter window.
Otherwise, you'll need to use a common attribute that your top rows have, and include that in your filter criteria, such as a checkbox column and filter that includes rows with checked boxes. Details on filtering are in the Using Filters help article.
