This may be an easy one or maybe not be able to be performed. I have a column that is showing the current total for the project . is there any way of showing the date in the cell as well as the amount in the same cell? or would i just need to add another column next to this one to input the date and change it when i change the amounts until the project is finished?

It's best to create an additional date column and keep the data separated.
You can create a date column and manually change the date, or if you typically only change the amount after adding your project, you might consider creating a Modified (Date) System column. This will provide you with the latest date that a cell on each row was modified. Details on this are available in the help center: https://help.smartsheet.com/articles/504619-column-types#autonumber
