There should be a column option (like created by) that displays what automation last was applied to that row. You could see a history of what automations ran by using the cell history. This would require the use of automation ID's since the name/title of the automation could change. Automation ID's are assigned today, but they are not highly visible, so would also need those ID's to become visible in without having to click anywhere into the automation itself.
You can manually do a form of this tracking today, but not all the automations allow you to end with changing a cell value. For example: no actions can be added after you record a date.
