Hello,
I was wondering if there's a way to update the calendar/gantt settings to use quarters based off of our fiscal year. Is that an option? Example - Q1 would be November-January

There isn't a way to set your own custom quarters for the fiscal year, but you can set the start of the fiscal year with the steps in our Help Center: https://help.smartsheet.com/articles/765755-modifying-project-settings#timelinedisplay
You can setup a fiscal calendar in the "Calendar View" app.
