I'm working on a project that I completed over two days and want to document my hours for both days. Sometimes we work on projects over several days in different weeks. How can I enter all this data. Right now I only have one column for Date and Hours. Am I able to add more columns to enter more Dates and Hours?

Smartsheet sheets can be quite different.

in this case do one row for each time slot spent (easy with the 'insert' key)
The date/Gantt feature that makes SmSh special will keep track of your work but mind that the Parent row will sum up time from earliest to latest dates of all children ... there is another discussion that solved this if you need consolidation on hours actually spent (to invoice for instance or customer communication )
