Is there a way to create a multiple selection option in a column? Was considering Checkboxes that could be linked to the selection by typing next to it or drop down options with ability to select multiple choices? Please let me know if anyone has created something like this or if there is an option to do something like this.

One way to accomplish this might be to use a google integration and create your form in Google form and allow your user to input their content via google forms. Then let it the form drive your entries to your smartsheet. There currently isn't a multiple selection option for webforms or in Smartsheet itself.
