Formula to return a date that a cell was changed to a specific value

I'd like to record a date that someone has changed a cell within the smartsheet to a specific value. The cell tracks 'stages' of a sales operations cycle (Proposal, Commit, Execute). I want to record THE date that someone changes that cell to "Commit". Is there a formula I can use to track those dates in my smartsheet?

You can do this with automation with a flow similar to this:

In this example the "Stage" column is on a dropdown, but it doesn't have to be.
