I have various Dashboards - one for each country.

Is it possible to build a Dashboard or a report that extract various dashboards in one list one after the other?

Are you able to provide some screenshots for reference and more detail as to what exactly you are wanting to accomplish?

Cannot share screenshot since it would expose private data......but it is fairly simple

I have 7 dashboards each one of them reporting the project status of one country

I would like to build another dashboard that extracts them all and reports on them all, one per each page, since i'm doing that manually in ppt today

You could create a "master dashboard" and copy the widgets from the individual dashboards over to the master. You would need to play with the formatting a bit to get the sizes right for each section being its own page when printing though.
