Not all my fields are showing in card view
I went to settings and checked all my fields to display however they are not displaying. Thanks for your help!

A card can display a total of 10 fields: the title, plus up to 9 additional fields, in order based on the columns in the Grid.
In your screen capture it looks like you have 5 fields selected, and there are 5 fields showing! (Notice how your card called "Rhino Rack" shows all 5 fields.)
Is it possible that the card where you only see 4 fields don't have data in some of the cells? Can you try double-clicking on some of those cards to see if there are any blank cells, perhaps in the "Date move out" column for "Xpress Global" and the "Will a second move in/out need done" column for the last two cards?

I'm running into this exact same issue but can definitely see that the column selected is not displaying.
The only thing that's different from the columns that are displaying when selected in Card View Settings vs not showing, is that they are set up as a Contact List type column. Is that a possible factor? The column we are trying to display will never be a null value either

You should be able to add a Contact List type of column in card view, yes. Just ensure that the column is selected in the Card View Settings.
If your field is multi-select, it won't show the usernames but the circle with the image or initials of the user. The last field I have showing in my card is a multi select contact field:
