Is there a way to automate new row upon receipt of email? And autopopulate basic fields?

As an example, say we tell our clients to use a template subject line: "Project Name Monthly Evidence"

Could I automate the process so that the Outlook Integration captures whenever an email is received with that subject line? A new row would then be created in a sheet, pulling the basic information from the email:

You can use the API to develop something, but you'll need to connect it to Outlook, PowerApps, or something else to make it work.

I recently worked with a client where I used Zapier and Outlook to set up the solution.
