Can you use the IF functions on drop down lists?
I am wondering if anyone has used multiple dropdown list columns that are essentially parent, child, ancestor
so if parent column choice is ... then child column choices are .. and if ... ancestor choices are

You can not dynamically update drop down choices within the same column based on choices entered rows above.

To clarify, there isn't a way in the Grid of the sheet to show/hide entire columns based on a dropdown selection, or to show/hide other dropdown values in a different column. Please add your vote to the related Product Idea here: Dynamic dropdowns - Waterfall request
That said, if you have all the columns set up in your sheet as separate dropdown lists with their own unique values, then you can use a Form with Conditional Logic to surface different fields (columns).
For example, if this is your sheet:
Then in your Form you can surface the correct column to fill out based on the "Food Type" selection. Here's how I would build it in my form:
This would then only show the Fruit options if Fruit is selected:
