Will transferring a license change the sheet owner?
An employee left the company and we are transferring their license to another employee. Will the sheets tied to that license also transfer to the new employee? Will the sheet ownership change to the new employee?

Unfortunately, no. Think of the license more like an additional set of permissions, rather than something that changes the ownership of anything in particular. The old employee's account will still exist until removed, but transferring the license will just give the new employee different capabilities, rather than change ownership or access. You will need to gain access to the previous employee's account and transfer from there. If that is not possible you will need to get in touch with Smartsheet support.
Sometimes, it can be a good idea to have a "service account" that is an account accessible by IT who is the primary owner of all critical objects. However, this can make it harder to track who specifically has made updates to sheets depending on who has access to it, so just keep that in mind.
