Update Requests: Can the editable fields vary by workflow?

I have a sheet with multiple update request workflows and would like to have a field be editable for one workflow but only viewable in another workflow. No one is shared to the sheet that is receiving these update requests.

@Lindy No you can't set the fields like that, you can only add or remove them per workflow.
