I am trying to create a task sheet with several projects on each row with phases

I am looking to have over 50 projects in one sheet and track the various high level stages of each project by assigning to the next resource. Can I put the stages as a drop down coulumn and as each team member finishes their stage they can assign to the next resource? What would be a good template to use? I am very new at smartsheet…. just a beginner.
