What formula to use to automatically enter today's date on column x, when column y is filled

The "Record the date when specific criteria are met" automation could be helpful to you here.

If for example, your Y column was a check box you could set the automation up like below but you also have the option to record the date is Y was to change to any value. Your X column will need to be a date column for this automation to work.
