Recurring Task Date Automation
How can I create an automation rule that automatically addes 7 days to the due date when I mark a weekly task as completed using a check box.

Unfortunately you cannot use a formula in automation. Everything used in automation "change cell value" comes out as a string and if you enter a formula in won't execute.
If so, I would have said to enter ={{Due Date}} + 7
