I want to track Hour-by-hour detail level of task assigned to the team please suggest the best view?

Currently Smartsheet does not have a "time" type of column, so it is best suited for tracking tasks on a more daily basis versus time. Please add your vote to this related Product Idea.

That said, you can configure your Project Settings to have set hours defined as a work day, and you can assign tasks with an hourly duration in a Gantt chart. Here's more information: https://help.smartsheet.com/articles/765727-enabling-dependencies-using-predecessors

Once you have your project set up, if you're on a Business or Enterprise plan, you can use Workload Tracking in the right-hand panel to check allocation across your resources.
