When One Value Changes, I want 3 Cells to Change

When a new row is added, I want 3 columns to show 0% Complete. I have used 3 condition paths with the details of what I want changed, but as soon as it satisfies the first, it doesn't update the other 2. Is my only option to create 3 automations? There must be a way to bypass stopping once the first condition is met.

Yes, you are correct the workflow will follow the first condition that is met and will not try the others. To automate 3 actions you can create 3 automations - one for each action.
