Automations with drop-down boxes

If I have a drop down status column with 8 statuses and each one needs to send an automation to different people, do I have to create 8 automations or can I create just one with the condition field?

You can utilize one automation then have your trigger set to when status changes to any value and have a condition for each of the statuses with the necessary action for each condition.
