How to disengage the Sort option
I know this is a long shot but we are having an issue with a document log that we enter in the next number on the list but recently there was an issue where someone sorted the sheet and that caused the numbers to go out of order and thus, when someone grabbed the next number it was the wrong one. I don't suppose there is any way to stop a sheet from sorting on any of the columns? We can't lock the columns as those of us who use the sheet need to be able to enter in our data.

Unfortunately this currently isn't possible. However, I've seen multiple threads of other people asking the same thing.
I recommend creating a Product Feedback Request so that other people can up vote it!
In the meantime, can you use an Auto Number column, and use that to generate unique IDs that you can use for each log? This way, even if the data is sorted in a weird order, the row will always generate the next ID in the sequence, and then the user can use that ID?
