As we are rolling out SS company-wide, many people are asking if we can have a single summary of notifications sent vs multiple emails each time. Is this possible?

You can! (if i understand you correctly)
Look here how you can set the how often it should send out the notification.
To keep the e-mails to a minimum i recommend my clients to change the notification settings and maybe only receive them in the notification center (if not urgent). Look here.
