I'm looking for an option to have those that are not admins to update a Sights space from time to time. Is there a way to grant someone edit access for Sights without them being an admin?

Yes there is, i'd make sure that the data displayed in your sight is drawing results from changes in contributing sheet which your Editing colleague can access and update. That will happen in real time.
