Is there a nice easy way to import issues from GH into rows in a SS? Ideally 1-way sync so I can keep running it and it picks up new issues without recreating already-imported ones?

Smartsheet currently doesn't have a direct integration with GitHub.
With that being said, you might explore a third-party resource such as Zapier to see if there is a "zap" that can sync this information for you.
