Hi, we are planning a home construction project and are not sure of dates. Is there a way just show days without dates, and exclude Sat/Sun?

You can plan out the project and only begin with using the duration column, but it will not show a Gantt chart (I think that´s what you're after?). You'll have to have start and end dates to be able to show the information on a Gantt chart.
Regarding the exclusion of Sat/Sun. You can set that up in the Project Settings - Dependency Settings in the Gantt view.
