How can I change the dates in the gant chart view Month Day Year to Day Month Year?

All date settings are controlled by Accounts (top Left of Screen) ~ Personal settings ~ Profile.

Timeline display is set in Gantt Settings (cog in top left of Gantt Chart.

Just a note on this, while in your profile settings, selecting your country will set the date format to whichever format is used in that selected country.
