How can I set a default format for my sheets?

One way I can think of is to format the entire sheet to the format you like.
To apply formatting to an entire sheet: Highlight all columns in the sheet by clicking the left-most column's header, scrolling to the right, then [Shift]+clicking the right-most column's header. When you release your click, all of the columns and rows in the sheet should be highlighted and you can then click the desired formatting icon.
After this, the formatting will be authmatically filled into new rows.

If you want the same format on sheets created in the future, save the formatted sheet into a template and be sure to check "keep data and formatting". Then create a new sheet from the template saved going forward.
